Monopotassium phosphate (MKP) (also, potassium dihydrogen phosphate, KDP, or monobasic potassium phosphate) is the inorganic compound with the formula KH₂PO₄. Together with dipotassium phosphate (K₂HPO₄^.(H₂O)_x) it is often used as a fertilizer, food additive, and buffering agent. The salt often cocrystallizes with the dipotassium salt as well as with phosphoric acid.

Single crystals are paraelectric at room temperature. At temperatures below −150 °C (−238 °F), they become ferroelectric.

 

Production Usage

Apply to manufacture metaphosphate in medical or food additive. Buffer; sequestrant; yeast food.Moisture retention agents, leavening agents, PH acidity regulators, stabilizers,coagulants, anti-caking agents:

1 Buffer agent: potassium dihydrogen phosphate is a high-quality strong buffer agent, which can effectively stabilize the PH range of the medium. PH regulator and PH stabilizer, control and maintain a stable PH change range, can make the food taste more delicious.


2 Chelating agent: potassium dihydrogen phosphate can be used as a chelating agent, and its function is reflected as

(1). The metal ions in the meat products combine the protein with calcium and magnesium ions in the muscle tissue

(2), raising the PH of the meat away from the isoelectric point of the meat protein.

(3), increase the ionic strength of meat, conducive to the muscle protein to a loose state

(4), dissociating actomyosin from muscle proteins

3 Yeast food:

potassium dihydrogen phosphate can be used as a culture agent, mineral nutrient fortifier, leavening agent and fermentation aid in yeast brewing.

4 Aciity regulator: potassium dihydrogen phosphate can be used as an alkaline agent to regulate food acidity.

The use of potassium dihydrogen phosphate and potassium carbonate is added to fast noodles products. In addition to ensuring the quality of fast noodles, it will also strengthen the rebicity and taste of noodles

5 Apply: 

It is commonly used in lunchmeat, cooked pig front leg meat, cooked ham, cooked minced meat, fish slices, cheese, ready-to-eat broth, cold drinks, etc., the dosage is 3g / kg effective phosphorus
 

6 Nutrition additives:

 

(1). It is capsule, ingot and labeled as food with daily edible limit. In the unused amount, the total content of phosphorus should not be higher than 1200 mg. 

(2). It can be appropriately used in special nutritional food according to the actual needs.

(3). It can be used in appropriate infant milk powder aged three years old or less according to the actual needs, and the proportion of calcium and phosphorus of the final product should be above 1.0 and below 2.0.
